From Dough to Delicious: A Look at the Baking Process at Carla's Banging Cookies
Have you ever bitten into one of our signature cookies and wondered, "How do they get so perfectly chewy?" or "What makes these so special?"
While we’d love to say it’s magic, the truth is a little more delicious: it’s a carefully crafted process that combines high-quality ingredients, passionate bakers, and a whole lot of heart.
At Carla’s BANGING Cookies, we treat every batch—whether it’s for a wedding of 200 guests or a small family order—like it’s the most important batch we’ve ever made. Come take a peek behind the curtain and see how we turn simple dough into the talk of Raleigh!
Step 1: Sourcing the Finest Ingredients
It might sound cliché, but we truly believe that great cookies start with great ingredients.
- The Butter: We use real, high-quality cream butter. None of that shortcut stuff. It gives our cookies that rich flavor and soft texture.
- The Chocolate: Whether it’s semi-sweet chunks or rich cocoa powder, we source flavors that are deep and complex.

- The Local Love: Whenever possible, we love incorporating fresh, local ingredients to give our cookies that unique Carolina twist.
Step 2: The Mixing Room Choreography
Our kitchen bright and early is a symphony of mixers and laughter. This is where our team puts the tips from our last blog post into action.
We start by creaming the butter and sugar until it’s light and fluffy—this is the foundation of that "melt-in-your-mouth" texture. Then, we add the eggs (always room temperature!) one at a time. Finally, we gently fold in the dry ingredients just until combined. Overmixing is the enemy of a tender cookie, so we handle that dough with care.
Step 3: The Patience of Chilling
This is the step no one sees, but everyone tastes.
Once the dough is mixed, it rests. We allow our dough to chill for a specific amount of time to allow the flavors to meld and deepen. This is what gives our cookies that complex, "bakery-style" taste that you just can't get from a quick mix-and-bake recipe at home.
Step 4: Portioning with Precision
For our custom events, consistency is key. Whether you’re getting a guest favor or a towering display for a bridal shower, every cookie needs to look as good as it tastes.
Our team uses scoops to ensure every ball of dough is exactly the same size. This guarantees that in a batch of 50 cookies, every single one bakes evenly and has the same perfect texture.
Step 5: The Bake
Into the oven they go! We keep a close eye on the temperature and timing.

We’re looking for that "sweet spot"—where the edges are just turning golden brown and set, but the center still looks slightly soft and underdone. Why? Because they continue to bake on the hot tray outside the oven. This technique gives us that signature feature: a crispy edge with a gooey, soft center.
Step 6: The Finishing Touch (Flaky Salt!)
As soon as they come out of the oven, while the cookies are still hot and the kitchen smells like heaven, we add our signature touch. A light sprinkle of flaky sea salt goes on top. It sounds small, but that little crunch of salt enhances every single flavor in the cookie.
Step 7: Cooling, Packing, and Delivery
Once cooled to perfection, the cookies are carefully packed. If they’re for a local delivery in Raleigh, they’re loaded up and headed straight to your door. If they’re for an event, they move to the decorating station for final touches.
